A Different Kind of Couples Lesson
This last lesson I did was just the kind of lesson I imagined doing when I started this business a year ago. A couple out in Solon wanted to learn how to butcher a chicken. They participate in a seasonal CSA from one of the local farms and with their order is an option to receive a whole chicken. This was something the couple was interested in, but they were only familiar cooking with the individual parts. To my knowledge, they had never roasted a whole bird either. They contacted me, and we planned out a fun lesson centered on chicken butchery. The couple were also looking for starch options that weren't rice or boiled potatoes. I showed them a simple butternut squash puree and oven-baked sweet potato fries with a spicy aioli. To round everything out, I demonstrated how to break down a few common vegetables to perform a simple sauté.
We had a lot of chicken parts, having broken down two whole birds. I discussed various cooking techniques and which ones worked best with which parts. We went over basic sanitation when dealing with raw meat. Finally, we covered my two favorite topics: mis en place and organizing your timing. We had a lot of fun and hopefully I provided the experience that will help them overcome their fear of the whole chicken. At the very least, they enjoyed an amazing meal while I cleaned up.
