I was out in Tiffin last month for a couples lesson. The couple have 5 children and a good handle on the basics; they were looking to expand their knowledge and skills in the kitchen. We met and I learned that they wanted to focus specifically on main dishes and ways to incorporate a wider array of vegetables into their diet. Based on their preferences, I designed a pretty ambitious lesson of two mains, fresh pasta, and two sides. Here was the menu:
1. Classic Meatball Marinara over Fresh Pasta
2. Pork Loin Roulade Stuffed with Spinach and Sausage
3. Roasted Cauliflower Florets
4. Vegetable Rice
We covered a variety of cooking techniques and my clients were surprised how straightforward and simple cooking can be when you have the proper preparation. As an added bonus, I was able to demonstrate that you can make top quality food without spending a lot on ingredients. I left them with recipes for everything we did, and hopefully a new confidence to conquer a weekend dinner project.
